If necessity is the mother of invention, summer heat waves are motivation for low heat cooking. June has greeted us with abnormally high temps, which means I do NOT want to turn on my oven. Instead, I turn to my crockpot. Prep in the morning, eat at night. I can do that!

Plus, here’s a great way to give a beef roast a makeover! Normally we think of roasts as winter meals with vegetables, but this is a summer recipe you can tuck away for hot nights, picnics and family gatherings!
